I’ve been working on having a healthy breakfast in the morning and been following the Epic Life Challenge with Epicure.
This morning I noticed my avocados were ripe! If you gently squeeze the avocado in the palm of your hand you can tel when it is ripe! Ripe, ready-to-eat fruit will be firm but will yield to gentle pressure. I decided to experiment and make an avocado smoothie.
If you aren’t a fan of milk you can use almond milk, oat milk or your favourite substitute. This recipe also uses frozen bananas because like a lot of people I know there is a frozen banana! You can easily use a fresh banana as well.
- 1 frozen ripe banana
- 1 ripe avocado
- 1 cup milk
- 1 cup greek yogurt
- 1 cup frozen mango
- Combine all the ingredients until smooth and blended.
There is lots of room to experiment with smoothies with avocado. Melon is popular as well!
I find that sometimes a smoothie with an avocado seems creamier than most shakes so my kids end up drinking it with a spoon and scooping it in.
