A new item for Epicure is the African Sweet Potato Stew! This stew is based on a West African peanut stew. Recipes for this stew vary widely and this one can be changed a bit.
This new product for Epicure will come in a pack of 3 and retail for 10.50 CA or 9.50 US. It is also gluten-free, non-GMO, Kosher and Low-Sodium.
This delicious soup can be made with ground black beans or ground chicken and has a mild curry flavour in a creamy coconut sauce.
Here’s a photo of what you need below about 4 cups of sweet potatoes/yam, crunchy peanut butter, broth (vegetable, chicken) or water is okay, coconut milk and diced tomatoes.
The next step is to peel and take your sweet potato and put it into the multipurpose steamer. I cooked it for about 6 minutes but really it depends on your microwave Yo could also bake it or cook it another way if you don’t have a steamer.
While those cooks start cooking the ground turkey. You can replace it with beans if you are a vegetarian or if you want to use ground something else like ground beef. When it’s done you add the seasoning, the tomatoes, the coconut milk, broth. After stirring you can add the sweet potatoes and the peanut butter. I cooked in the wok.
Make sure you give the peanut butter A HUGE STIR so it doesn’t become clumpy in one spot. Ask me how I know cause I had a big lump of it LOLOL. Also if you can’t have peanut butter you can always switch it to wow butter or an alternative.
Then plate it and serve.
The African Sweet Potato Stew was a winner. My kids who are 6 and 4 loved it and it felt like a win and it had a nice curry taste to it. It would be fantastic for a winter meal. Warning some people found it to be spicy so if you have a low tolerance for spice it might have some kick for you. But it was completely fine for my 6 and 4 year old.
